This handsome design features a hard, thin, and very sharp edge in Oliver’s preferred 1.2419.05 tungsten-carbon steel, prized for its toughness and edge retention. With convex bevels, a tall heel, and needle-like tip for slicing and detail work, this mid-size 180mm / 7.1″ chef’s knife is as versatile as it is elegant.Ancient bog oak and brass complete a handsome and comfortable handle in Oliver’s popular shield-style profile.
