A well-loved profile from Don Carlos Andrade of Los Osos, California is the extraordinary Alsace-inspired French Chef Knife. While the stunning culinary tool may look like a work of art, it is built to perform in the kitchen at the highest level. Forged of durable and tough high-performance RWL-34 stainless steel created in small batches by Damasteel in Sweden, the sleek blade features a full distal taper along the spine to provide balance and versatility, combined with Don’s pronounced, free-hand convex bevel geometry to support the more demanding cuts. Completing the dynamic, 210mm / 8.3″ profile is a slim, razor-sharp tip for detail work and effortless slices. An heirloom-quality build, as is all work from this artist, sculptor, and bladesmith of over four decades, is a striking piece of sculpted, ironwood in Don’s rendition of a classic Alsace handle, inspired by the knives of past centuries. Every detail is accounted for in the realms of both form and function, with a custom vintage “Pearl Luster” micarta inlay adorning the handle as the finishing touch. A knife built to last generations as the workhorse of the kitchen. Don’s custom, cloth-covered saya is included.
