Presenting a rare opportunity to own and cook with a pre-owned, like-new, 250mm damascus chef knife by Ian Rogers of Haburn Knives. Ian recently refinished the knife from handle to tip for us, making this one-of-a-kind build, in his homemade carbon damascus steel, ready for uncompromising performance in home and professional kitchens alike. Standing 51mm tall at the heel, the long, handsome blade enjoys mid-height convex primary bevels that slim downward to an especially thin, ‘near-zero’ edge with only the subtlest of secondary bevels, hard and sharp and beautifully positioned for all manner of daily meal prep. Its length combined with the gyuto-style blade profile that includes a long, flat stretch of edge from the heel forward, positions this blade for delicate and precise slices, while providing ample heel hight and other attributes needed for chopping of even the largest foods. Balancing nicely just as handle bolster meets blade, the 250mm / 9.8″ of high-contrast damascus steel flexes laterally throughout its length, the spine’s full distal taper and Ian’s excellent hardening process resulting in a dynamic and versatile cutting tool. Forged by hand and sculpted to match the rest of the handle’s shield-style wa profile, the integral bolster displays the damascus’s pattern on all sides before merging, with heirloom fit, to a stunning piece of spalted tamarind. Boasting as much character as the knife itself, the natural grain of the wood complements the steel wonderfully, together forming an artful culinary object poised to rule the kitchen.
