With its dense layering of carbon alloys that produce a stunning chatoyance under the lights of the kitchen, random-pattern damascus clads a core of high-performance ApexUltra tungsten-carbon steel to form the 205mm / 8.1″ blade of this Jason Ellard creation. Forged by hand at his studio in Tasmania, Jason has crafted a versatile and hardworking tool for the discerning chef, shaped to perform every cut from the most demanding to the most delicate. Convex, symmetrical bevels deliver ample toughness and material in the rear nearest the 52mm-tall heel for chopping and tough ingredients, the geometry slimming progressively forward before reaching an extremely fine, needle-like tip perfect for precision slicing and detail work. The blade’s rounded spine tapers from the integral forged bolster forward yet retains its rigidity throughout its length. At 8.4oz / 238g overall and balancing a hair in front of the rounded blade choil, this chef knife is weighted, steady, and powerful in the hand, all in a size and profile that will be at home in any size kitchen and in the hand of every cook. For comfort and control, the beautiful, sculpted damascus bolster is complemented by polished stainless steel and a striking piece of Australian Ringed Gidgee to form the handsome, Western style, hidden-tang handle.
