Built for the rigors of daily cooking in home and professional kitchens alike, a 205mm / 8.1 edge is forged from 26c3 steel, a high-carbon alloy often referred to asSpicy White for its clean, fine grain structure and excellent edge retention. The finished product showcases Don’s signature blend of precision, creativity, and soul. Carved by hand with a flowing, scaled motif evocative of a dragon in flight, the Dragons Eye Gyuto lives up to its name. Hand sanded to a satin finish and etched to reveal Dons differential heat treatment and resulting hamon line, the blade culminates in a sharp, angular tip that adds both aesthetic flair and practical agility for detail work. His pronounced, convex bevel geometry, symmetrical and slimming downward to a thin, razor-sharp edge, gives this one-of-a-kind tool the power, versatility, and durability needed in any fast-paced kitchen. The gently curved edge and 48mm heel height provide ample knuckle clearance and a dynamic profile for slicing, dicing, and rocking through prep with ease. At 6.7oz / 192g, it strikes a harmonious balance in hand: substantial, yet nimble.
