From designer and knifemaker Don Nguyen’s highly anticipated Design Series project comes the butcher’s boning knife, and this limited, newly updated 2nd edition represents the pinnacle in performance to date. Shaped from52100 carbon steel with stone washed finish below a faceted, polished spine, the 130mm / 5.1″ upswept blade now offers meticulously hand-ground concave bevel geometry above a slim, convex stretch which tapers to a near-zero edge, designed to significantly increase the blade’s lifespan through the numerous sharpenings demanded of the butchery work it is created for. Tough, rigid, slim, and pointed at the triangular tip, the profile delivers the strength plus finesse needed to prepare proteins for the dining table. As thoughtfully designed and executed as the blade is a handle of black G10, a melding of a woven glass cloth material and an epoxy resin matrix, which Don and his team have given a sandblasted and tumbled texture for the grip and control required, sculpted into a uniquely captivating form which combines curves, facets, and a series of flush steel pins.
