From the rosewood handle with sculpted bolster and a finial forged from a Nissan S14 shifter shaft, to the blade of Jeramie’s own wootz steel clad in stainless-and-reclaimed-vintage-saw-blade damascus, this chef knife has stories to tell. Forged at his one-man studio in southern Australia, steelmaker, bladesmith, and artist Jeramie ‘Jezz’ Heywood delivers a gyuto-inspired daily driver for the chef’s kitchen. Quite thin along the 225mm / 8.9″ edge from heel to tip, and just as sharp, with a relatively straight profile and 60mm overall height, this build will excel at both chopping tasks and slicing work, while a slim, low, pointed tip is positioned perfectly for precision cuts. One of those knives made to do it all. The damascus cladding is separated from the small-batch crucible steel core by a vein of pure nickel which inhibits carbon diffusion during the forging and hardening processes. The bevels, symmetrical, tall, and subtly convex, receive a silky, hand-sanded satin finish, complemented by forge-finished flats that maintain the marks of the blade’s hammered origins. Both spine and choil are rounded for comfort. Aiding in the area of comfort and providing control for hands large and small and for any grip style, the handle is made primarily of a beautifully colored piece of rosewood, capped with a tapering, sculpted bolster of Jezz’s own homemade synthetic made from recycled materials, and finished at the rear with the finial of automotive lineage.
