All of the hallmarks of Benjamin Kamon’s meticulous work are on display in this one-of-a-kind chef knife handled in beautiful oak reclaimed from a used wine barrel. From the handle’s construction and material combination that pairs solid, torpedo-style copper end caps with the oak in a removable configuration, to the blade’s ‘Denty’ forge-finished flats and extreme distal taper, Benjamin’s popularity amongst chefs should surprise no one. The 1.2519 carbon steel is forged and then ground with symmetrical, convex bevel geometry and the aforementioned tapering along the rounded, polished spine that slims from 3.8″ above the maker’s mark to barely three-quarters of one millimeter an inch from the tip. Setting this particular knife apart further is a hybrid gyuto-chef edge profile that rocks nicely on the board and features a choil that drops almost straight downward instead of curling back under the handle like some other designs of Benjamin’s. We are big fans. As expected, a custom saya is included.
