In an elegant and unique paring knife profile that Don Carlos Andrade produces only rarely comes a tool designed for versatility and suited especially well to handheld work above the board as well as detailed slicing work with its slim, aggressive tip. Inspired by Vincent Van Gogh’s iconic work, this one-of-a-kind parer boasts a sculpted, Western style, full-tang handle in G.L. Hansen & Son’s handmade Starry Night G-Carta. Layers of carefully laid fabrics are compressed under high pressure with resin to form the stunning material which Don secures with three domed, hand-peened stainless steel pins. At the business end of the knife is 100mm of razor-sharp, satin-finished RWL 34 stainless steel, a high-performance alloy produced in small batches by specialty Swedish steel maker Damasteel. Tapering along the rounded, polished spine to an especially fine, pointed tip, the hard-working blade enjoys Don’s superb convex geometry above a sharp, thin edge.
